Chicken and Leek Pie | RECIPE OF THE MONTH

Last week I randomly made up a recipe I fancied trying. It actually turned out really nice and yummy so I thought I would share the recipe over here on my blog.

Ingredients needed
450g Diced chicken
1 Onion chopped
2 Leek chopped and washed
200g Mushrooms Sliced
150ml Double cream
1/2 Pint of chicken Stock
4 Sweet Potatoes diced
Dried thyme
Salt and Pepper
Knob of butter

First of all I fried the chicken in some cooking oil until cooked through. I use a wok to cook mine in.

At this point I boiled the sweet potatoes in a separate saucepan.

Back to my chicken in the wok. I next added the onion, leeks, mushrooms, dried thyme, salt and pepper and cooked for a further 10 mins.

I then added the chicken stock and cream and left it simmering for another 10 mins.

Once the sweet potato was cooked I drained these and mashed them together with a little knob of butter and the salt and pepper. This is my topping ready to add.

The chicken mixture I transferred to an open proof dish and added the sweet potato topping.

I put this in the oven for about 20-30 mins on 210c. Until bubbling through and looking cooked through.

Now its ready to serve and eat. We had ours with broccoli.

I was really impressed on how good this tasted when we tried this and I will be making it again in the future.
